Texas Brisket Breakfast Quesadillas | Blackstone Griddles

Ingredients
1 pound smoked brisket
Cooking oil, for griddle
6 burrito-size flour tortillas
7 oz. queso quesadilla cheese, shredded
7 oz. sharp cheddar cheese, shredded
1 jalapeno pepper
5 eggs
Brisket rub or salt and pepper
BBQ sauce
Directions
1. Cut the brisket into bite-sized pieces. Slice the jalapeno pepper open, remove the seeds, and chop it into small pieces.
2. Preheat a Blackstone griddle to low heat. Lightly coat the griddle top with oil using a paper towel. Warm the brisket on the griddle for a few minutes.
3. Place 3 tortillas on the griddle. Sprinkle each with queso quesadilla cheese, sharp cheddar cheese, warmed brisket, and jalapeno pieces.
4. Whisk the eggs, then scramble them gently on the griddle. Season with brisket rub or salt and pepper. Once cooked, divide the eggs evenly among the quesadillas.
5. Drizzle your favorite BBQ sauce on top of each quesadilla, then add more queso quesadilla and sharp cheddar cheese. Place a second tortilla on top of each quesadilla. Gently press down to help the cheese melt and hold everything together. Flip each quesadilla when the bottom is lightly browned.
6. Remove the quesadillas from the griddle once the tortillas are lightly browned and the cheese is melted. Cut them into pieces and enjoy!

    I don't hate Nate! I used to think like others do, that his constant interrupting of CJ was annoying But the more I watch. I've reconsidered and think he brings a nice balance to the show. Nate is the Ketchup to CJ's Dukes mayo, not bad by itself but much better together! 😊

    I almost bought the Blackstone Griddle Seasoning & Cast Iron Conditioner but when I looked at those ingredients I was not happy with the Palm, Canola and Soy Oils in there. So I just seasoned it with Avocado Oil. Came out great and did my first cook this morning. Onions, Peppers, Smashburger patties made with Organic grass fed meat and eggs. Nothing stuck and it tasted great. I'll stick with the more heathy oils. Worked just fine

    Okay, I have an onion allergy that can really set me off at times but I was convinced by this video to use them for my first griddle seasoning and wow, the surface is so slick! This is how I'll do it from now on, my wife got me this griddle for my birthday/Father's Day gift and I'm excited to start cooking on it!! First meal will be steak and fried rice. The absolute must have is bacon in your fried rice, only one place I've been to that did it and it's the best!!

    Todd... Those looked so good. I looked up the Rudy's on Google Maps, it is pretty close to the German Bakery so the next time I drive from Littleton down there I will have to check it out. The Brisket might taste pretty good inside some Brochen buns.

    Just a few things to consider when seasoning that I thought I’d share after just doing mine. I started to season in the afternoon which led into night time so I had to grab a headlamp. The first is if it’s on a uneven surface it will pool on the back and then go down the back side into the catch pan. Something else is that, out of all the videos I watched before doing mine, is everyone uses paper towels to season. One thing I noticed when I started to use the headlamp is i could see all the tiny fibers off of the paper towel going into my season. Idk if anyone else noticed that but it was super obvious with that kind of lighting. I went to grab some big gun patch cleaning squares and used those instead. They are more like a old t shirt than anything else. I managed to get all the fibers off but just something I didn’t want to season into my flat top.

    I think the idea is great, I think had you used a dome and a bit of water to add steam to it to melt the cheese better it would been dead on. As far as some of the antics and other stuff, not much of a fan of it. Thats ok! Kudos on the idea on the food.

    This isn’t a pancake. 1. Why use clarified butter? 2. Those steamed veggie’s are going to be slimy, why not roast them on the Blackstone for color and flavor? 3. Kim-chi is a unique flavor that some might not like. Recommend other options, dumb it down.
